In a bowl, mix the softened butter, minced garlic, and chopped parsley. Set aside.
Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Heat 1 tablespoon of oil in a pan over medium heat. Cook the chicken until it develops a nice crust and reaches an internal temperature of 145–150°F (it will finish cooking in the oven).
Let the chicken rest for a few minutes, then chop into strips or small pieces. Set aside.
