Skip the overpriced scoops and make your own Chipotle-inspired bowl at home—loaded with juicy chipotle chicken, flavorful cilantro-lime rice, seasoned black beans, corn salsa, pico, and queso. Every bite is fresh, bold, and fully customizable.
Why I’m Making It at Home
Okay, real talk: Chipotle prices are getting crazy—especially when you’re paying extra for guac, queso, and sometimes get a scoop of chicken that feels more like a sample. 🙃 That’s why I started making it at home, and let me tell you… not only is it cheaper, but you can load up your bowl however you want. Double chicken? Go for it. Extra corn salsa and queso? Pile it on. This recipe makes enough for multiple servings, so it’s great for meal prep too.
Why You’ll Love This
- Way more bang for your buck – Save money and get full portions.
- Meal prep-friendly – Make everything ahead and assemble bowls all week.
- Full of flavor – Smoky chipotle chicken, tangy rice, bright salsas, and melty queso = flavor explosion.
- Make it your way – Add guac, lettuce, cheese, or whatever toppings you love.
- Tastes like Chipotle… but even better – You’re using fresh ingredients and seasonings from your own kitchen.
Customization Ideas
This is your bowl—build it exactly how you like it:
- Protein: Use steak, shrimp, carnitas, or keep it vegetarian with just beans.
- Base: Sub brown rice, quinoa, or even a salad base.
- Toppings: Add sour cream, shredded cheese, lettuce, or homemade guac.
- Heat level: Adjust jalapeños or chipotle powder to control spice.
- Queso or no queso: Always queso (but it’s optional, I guess). 😅
How to Store & Reheat
- Chicken, rice, and beans store great in the fridge for up to 4 days in airtight containers.
- Pico and corn salsa are best fresh but will keep for 2–3 days.
- Queso can be reheated in a pan on low heat or microwaved in short bursts, stirring in between.
Tip: Store toppings separately and assemble your bowl fresh each time!

Rinse your rice thoroughly under cold water.
