Chipotle Chicken

Queso

Instructions

Marinate and Cook the Chicken

  1. In a food processor, blend chipotle peppers in adobo, garlic, cumin, oregano, salt, black pepper, chipotle chili powder, olive oil, and water until smooth.

  2. Pour the marinade over chicken thighs and let it sit for a few hours or overnight in the fridge.

  3. Heat a pan over medium-high heat and cook the chicken until browned and fully cooked through.

  4. Let it rest, then chop into bite-sized pieces.

Cilantro Lime Rice

  1. Rinse your rice thoroughly under cold water.

  2. Cook the rice in a rice cooker or pot with water, a little oil, and a bay leaf.

  3. Once done, remove the bay leaf and stir in salt, lemon juice, lime juice, and finely chopped cilantro until evenly combined.

Black Beans

  1. Add canned black beans and enough water to a pot to allow for simmering.

  2. Season with bay leaf, salt, black pepper, chipotle chili powder, cumin, garlic powder, onion powder, and oregano.

  3. Let the beans simmer for about 5–10 minutes, then remove from heat and mix in lemon and lime juice.

Pico de Gallo

  1. In a bowl, combine diced roma tomatoes, diced red onion, finely chopped cilantro, diced and deseeded jalapeños, lime juice, and salt.

  2. Mix everything together and adjust lime or salt to taste.

Corn Salsa

  1. In a large bowl, mix together thawed sweet corn, diced red onion, chopped cilantro, diced and deseeded jalapeños, lime juice, lemon juice, and salt.

  2. Stir until well combined and taste to adjust seasoning.

Queso

  1. In a pan over low heat, warm up milk, then stir in shredded cheddar and Monterey Jack cheese.

  2. Keep stirring until everything melts together smoothly.

  3. Add garlic powder, onion powder, and chipotle chili powder.

  4. Once fully melted, stir in finely diced jalapeño (or poblano/serrano) and roma tomato. Serve warm.

Assemble

  1. Add rice to your bowl, then top with chicken, black beans, pico de gallo, corn salsa, and a drizzle of queso. Add any extra toppings you like—cheese, sour cream, avocado, or hot sauce—and enjoy!
