Ingredients
  • olive oil (cooking and drizzling)
  • 1 large shallot (1-2 based on personal preference and size)
  • 6 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 shot vodka
  • 1 tsp red pepper flakes (more or less based on personal spice preference)
  • 1 cup heavy cream
  • black pepper
  • 1/2 cup parmesan cheese
  • 8 oz rigatoni pasta
  • salt (pasta water and seasoning)
  • burrata cheese (topping)
Instructions
  1. Cook the Pasta: Bring a large pot of water to a boil and heavily salt it. Add the rigatoni and cook according to package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water, and set aside.

  2. Start the Sauce: In a large skillet or saucepan, drizzle olive oil over medium heat. Add the finely diced shallots and minced garlic, and sauté until fragrant and softened, about 3-4 minutes.

  3. Add Tomato Paste & Spices: Stir in the red pepper flakes and tomato paste, cooking until the tomato paste deepens in color and the mixture is well combined, about 2-3 minutes.

  4. Add the Vodka: Pour in the vodka and let it cook down, stirring to incorporate, until the alcohol has mostly evaporated and the sauce is slightly reduced.
