Why You’ll Love This Recipe

  • Super Crispy Texture – Thanks to double frying, these potato rings develop a shatteringly crisp exterior while remaining tender inside.
  • Garlicky & Savory – The combination of fresh garlic, parmesan, and seasonings makes every bite packed with flavor.
  • Fun & Unique Shape – These potato rings are a creative alternative to traditional fries or mashed potatoes.
  • Customizable – You can easily tweak the seasonings or omit the parmesan if you prefer a simpler version.

Important Note About Parmesan Cheese

One of the key ingredients in this recipe is parmesan cheese, which enhances the depth of flavor and creates a crisp, golden crust when fried. However, parmesan contains oils that caramelize and stick to the bottom of the pan during frying. To prevent this:

  • Always use parchment paper under each potato ring when frying. This keeps the cheese from directly sticking to the pan.
  • Do not flip or remove the parchment paper too soon. When you first drop the rings in the hot oil, make sure the parchment paper is on the bottom. Let the rings fry undisturbed until the top side is slightly golden and crispy. Only then should you carefully flip the rings and remove the parchment paper.
  • If you want to skip using parchment paper, omit the parmesan from the recipe. Without the cheese, the rings won’t stick as much, making the frying process simpler but slightly less flavorful.

The Magic of Double Frying

Double frying takes these potato rings to the next level by giving them an ultra-crispy exterior. During the first fry, the potatoes develop structure and initial crispiness. The second fry ensures that the exterior becomes even crunchier without worrying about the rings sticking to the pan, as the cheese has already set and formed a crust. This step is highly recommended if you want maximum crispiness!

Other Helpful Tips

  • Make the rings uniform: Try to keep the potato rings the same size for even cooking and crispiness.
  • Don’t skip the seasoning: Properly seasoning the mashed potato mixture ensures every bite is flavorful.
  • Serve immediately: These are best enjoyed hot and fresh for that perfect crispy texture.

Ingredients

Instructions

  1. Prepare the Potatoes: Quarter the potatoes and place them in a pot of water. Heavily salt the water and boil until the potatoes are fork-tender, about 15 minutes. Drain and transfer to a large bowl.

  2. Season the Potatoes: Mash the potatoes and mix in the salt, garlic powder, paprika, chicken bouillon powder, cornstarch, and parmesan cheese.

please read this section above "Important Note About Parmesan Cheese"
  3. Make the Garlic Butter Paste: In a pan over low heat, melt the butter. Add the minced garlic and sauté until fragrant. Stir in the milk and slowly whisk in the flour to create a thick paste.

  4. Combine Everything: Add the garlic butter paste to the seasoned mashed potatoes and mix thoroughly.

  5. Shape the Potato Rings: Take a tablespoon of the mixture, roll it into a ball, flatten it slightly, and use a chopstick to punch a hole in the center to form a ring.

  6. Prepare for Frying: Cut squares of parchment paper to place under each potato ring to prevent sticking.

  7. First Fry: Heat oil to 350°F (175°C). Drop the potato rings into the oil with the parchment paper underneath. Once the top side starts to turn golden, carefully flip the ring and remove the parchment paper. Fry until golden brown and crispy. Work in batches.

  8. Second Fry for Extra Crispiness: Fry the rings again for another 2-3 minutes until deeply golden and ultra-crispy.

  9. Serve & Enjoy: Serve immediately with sour cream chive dip (recipe available here).
