These Garlic Parmesan Potato Sticks are everything you love about crispy fries and cheesy potato bites, rolled into one delicious snack! With a golden, crunchy exterior and a fluffy, savory center, each stick is packed with garlic, Parmesan, and a hint of smoked paprika. Their fun shape makes them endlessly snackable and perfect for dipping – a truly addictive treat that’s easy to make and impossible to resist!

Ingredients
  • 800 g potatoes (I used russet)
  • 115 g cornstarch
  • 2 tbsp neutral oil
  • 2 tbsp milk
  • 1 tbsp garlic powder (more or less according to personal preference)
  • 1 tsp smoked paprika
  • 1/2 tsp salt (more or less according to personal preference)
  • 3 tbsp parsley
  • 60 g parmesan (shredded finely)
  • extra parmesan for topping
Instructions
  1. Place the potatoes in a pot of water and boil until they are fork-tender. Drain and allow them to cool slightly.

  2. In a large bowl, mash the boiled potatoes until smooth. Add the cornstarch, neutral oil, milk, garlic powder, smoked paprika, salt, parmesan cheese, and parsley. Mix until well combined and the mixture is smooth and thick.

  3. Transfer the potato mixture to a piping bag fitted with a round tip.

  4. In a deep pan or fryer, heat oil to 350°F (175°C).

  5. Squeeze the potato mixture out of the piping bag to form sticks, cutting each one as it emerges. Carefully place the sticks into the hot oil in batches, frying until they are evenly golden brown and crispy.

  6. Use a slotted spoon or tongs to transfer the fried potato sticks onto a paper towel-lined plate to remove any excess oil.

  7. Top with extra parsley and a sprinkle of Parmesan cheese. Enjoy while warm!
