The Best Cinnamon Rolls
These are the cinnamon rolls I make when I want something that comes together in one day without sacrificing any of the things that make a cinnamon roll great. A soft enriched dough with a generous dark brown sugar and cinnamon filling that gets caramelized and jammy as it bakes, and a vanilla bean cream cheese frosting that melts into every swirl. This is my go-to same-day cinnamon roll recipe! If you have more time and want to go full brioche dough check out my Brioche Cinnamon Rolls which take things even further with an overnight cold ferment and an even richer dough.
Why You’ll Love This Recipe
- Same day recipe — no overnight ferment, no planning ahead, just mix and bake
- Proper enriched dough — butter incorporated after gluten development gives you a soft pillowy crumb that holds up to all that filling
- Generous filling — dark brown sugar, cinnamon, and butter spread all the way to the edges so every single bite has filling in it
- Vanilla bean cream cheese frosting — real vanilla bean, tangy cream cheese, and just enough sweetness to complement without overwhelming
- 10-12 massive rolls — enough for a crowd or enough to have leftovers for days

Cinnamon Rolls: The Same-Day Version
I already have a Brioche Cinnamon Roll recipe on the blog that uses an overnight cold fermented brioche dough. If you have the time and want the most indulgent, deeply flavored cinnamon roll possible that’s the one to make, but sometimes you just want cinnamon rolls today without planning the night before! These are not a shortcut, just a same-day version that delivers on everything a great cinnamon roll should be 🙂

Cinnamon Roll Ingredients
ENRICHED DOUGH
- 660 g bread flour
- 100 g granulated sugar
- 13 g salt
- 10 g instant dry yeast
- 336 g milk, warmed
- 2 large eggs, room temperature
- 113 g unsalted butter, softened to room temperature, cut into small pieces
CINNAMON SUGAR FILLING
- 113 g unsalted butter, softened to room temperature
- 280 g dark brown sugar
- 3 tbsp ground cinnamon
- ½ tsp salt
VANILLA BEAN CREAM CHEESE FROSTING
- 8 oz cream cheese, softened to room temperature
- 6 tbsp salted butter, softened to room temperature
- Seeds from 1 vanilla bean pod
- 150 g powdered sugar
OPTIONAL
- 1/2 cup heavy cream, to pour over proofed rolls before baking

The Dough
This is a properly enriched dough, bread flour for structure, eggs for richness, and butter for that soft pillowy crumb that makes a delicious cinnamon roll. The key technique here is adding the butter after you’ve already developed the gluten, not at the beginning. Fat coats flour proteins and inhibits gluten formation, so if you add butter too early you’ll never build the strong gluten network you need to support all that filling and hold the swirl together during baking. Build the gluten first, then work the butter in gradually.
Bread flour rather than all-purpose gives you more structure and a chewier, more substantial crumb that stands up to the filling and the frosting without feeling cakey or dense.

The Cinnamon Sugar Filling
This filling has dark brown sugar which gives you a deeper, more complex caramel flavor. It’s mixed with softened butter and cinnamon and it spreads into a thick paste that you’re going to spread generously all the way to every edge of the dough. The salt in the filling is important to balance the sweetness and makes the whole thing taste more complex and less one-dimensional.

Rolling, Cutting, and Shaping
Rolling the dough out to 28×16 inches sounds large but this size gives you rolls that are thick enough to be substantial without being so big they don’t cook through evenly. Roll from the short edge into a log! This gives you rolls that are wider than they are tall which means more filling in each swirl and a better bake. Cut each roll 1 to 1.5 inches thick. Eight rolls fit perfectly in a 9×13 inch pan with the sides touching. That contact during the final proof is what gives them that pull-apart texture and helps them rise upward rather than outward.

The Vanilla Bean Cream Cheese Frosting
I only like cinnamon rolls with cream cheese frosting! The tanginess cuts through the sweetness of the filling and the richness of the dough in a way that plain buttercream or powdered sugar glazes don’t. I like using real vanilla bean pods instead of extract because the seeds speckle the frosting beautifully and the flavor is more complex. You can also use vanilla bean paste if you dont have vanilla pods.

How To Make Cinnamon Rolls
- Make the dough: In a stand mixer fitted with a dough hook combine bread flour, granulated sugar, salt, instant yeast, warmed milk, and eggs. Mix on low speed until all ingredients come together into a shaggy dough ball. Increase to medium speed and knead for a few minutes until the dough comes together and looks smoother.
- Add the butter: With the mixer running on medium speed slowly add the butter a few small pieces at a time, waiting for each addition to incorporate before adding the next. Continue kneading until the butter is fully incorporated and the dough is smooth, elastic, and passes the windowpane test (stretch a small piece between your fingers and it should be thin and translucent without tearing).
- First rise: Shape the dough into a taut ball and place in a lightly oiled bowl. Cover and let rise at room temperature until doubled in size, about 1 to 1.5 hours.
- Make the filling: While the dough rises combine softened butter, dark brown sugar, cinnamon, and salt in a bowl. Mix until well combined into a smooth spreadable paste. Set aside.
- Roll out the dough: Once doubled, turn the dough out onto a lightly floured surface. Roll into a 28×16 inch rectangle with even thickness throughout. Make sure your edges are as straight as possible, clean edges will give you cleaner rolls!
- Fill: Spread the cinnamon sugar filling evenly all over the surface of the dough going all the way to every edge. Don’t leave any bare spots — every part of every roll should have filling.
- Roll and cut: Starting from the short edge roll the dough tightly into a log, maintaining even tension throughout. Cut off the excess dough bits on the ends. Using a sharp knife or unflavored dental floss cut into 10-12 rolls, 1 to 1.5 inches thick.
- Arrange and final proof: Place rolls cut side up in your baking pan. 8 fit in a 9×13 inch pan with a little space between them. Cover loosely and let final proof until noticeably puffy and the sides are just touching, about 1 hour.
- OPTIONAL: Pour 1/2 cup heavy cream over all the rolls. The cream creates steam in the oven and makes the rolls even softer and more pillowy but this dough is already quite tender without it so this is optional! (It can help keep rolls softer if you have a convection oven)
- Bake: Preheat oven to 350°F. Bake for 22-25 minutes until deep golden brown and the internal temperature reaches 190°F.
- Make the frosting: Beat softened cream cheese and softened butter together until completely smooth and fluffy. Add the vanilla bean seeds and powdered sugar and beat until creamy and well combined. Taste and adjust sweetness if needed.
- Frost: Spread the frosting generously over the warm rolls and serve immediately!

Storage & Reheating
Storage
Store leftover rolls covered in the fridge for up to 4 days.
Reheating
- Microwave: Heat individual rolls for 20-30 seconds until warm and soft
- Oven: Cover with foil and warm at 300°F for 8-10 minutes
Make Ahead
After cutting and arranging the rolls in the pan cover tightly and refrigerate overnight instead of doing the final proof at room temperature. The next morning if they still need more time, finish proofing at room temp before baking. This is a great option if you want fresh rolls in the morning!
Freezing
Baked rolls freeze well. Once completely cool wrap individually and freeze for up to 1 month. Thaw at room temperature and reheat in the microwave or oven before serving.
