Homemade Flour Tortillas
Homemade flour tortillas are one of those things that seem optional — until you make them once. Warm, pliable, and gently buttery, they bend without cracking and stay soft long after cooking. Unlike store-bought tortillas that often dry out or split when wrapped, these are designed to stay flexible whether you’re rolling a burrito, folding a quesadilla, or making my Chopped Chicken Caesar Wrap. This dough uses hot water and melted butter — a classic technique that keeps tortillas tender rather than bready. The key to success is restraint: knead just until smooth, cook just until puffed, and stop before they dry out.

Homemade Flour Tortillas: Why Hot Water and Butter Make All the Difference
The technique here is what sets these tortillas apart. Hot water partially gelatinizes the flour while melted butter coats it with fat — together they create a dough that stays tender rather than tough. A short rest allows the gluten to relax so the dough rolls out thin and even without springing back. Once you understand these two things the whole process makes sense and becomes completely repeatable every time.
Homemade Flour Tortilla Ingredients
Tortilla Dough
- 400 g all-purpose flour
- 1½ tsp salt
- ½ tsp baking powder
- 100 g unsalted butter, melted
- 240 g hot water
Spinach Tortilla Version
- 3 cups fresh spinach, blended with 240 g water and strained to yield 240 g green liquid — use in place of the water
Mixing the Dough
Start by combining flour, salt, and baking powder in a large bowl. Add the hot water and melted butter and mix until a rough dough forms. At this stage it will look shaggy and uneven — that’s completely normal. Don’t worry about getting it perfectly smooth yet, that happens during kneading.
Kneading
Turn the dough out onto a lightly floured surface and knead until smooth — this usually takes 6-8 minutes by hand. The dough should feel soft, supple, and no longer streaky but not tight. Over-kneading will make the tortillas elastic and difficult to roll so stop as soon as it’s smooth. You can also use a stand mixer fitted with a dough hook on low speed for 2-3 minutes, stopping as soon as the dough comes together.
Resting and Rolling
Cover the dough and let it rest for 30 minutes — this step is essential and cannot be skipped. Resting relaxes the gluten which allows the tortillas to roll out thinly without shrinking back. After resting divide into portions, roll into smooth balls, and keep them covered while you work. Flour your surface and both sides of the dough. Roll from the center outward, rotating the dough about 45 degrees after each pass, until you reach your desired size. To transfer to the pan roll it gently over your rolling pin and slowly unroll it onto the hot surface.
How To Make Homemade Flour Tortillas
- Mix dry ingredients: In a large bowl whisk together flour, salt, and baking powder until combined.
- Add wet ingredients: Add hot water and melted butter and mix until a rough shaggy dough forms.
- Knead: Turn dough onto a lightly floured surface and knead until smooth and supple, about 6-8 minutes by hand or 2-3 minutes in a stand mixer on low. Do not over-knead.
- Rest: Cover the dough and let it rest for 30 minutes. This is essential — do not skip this step.
- Portion: Divide dough into portions based on your desired size — 150 g for burrito-size (14-15 inch), 100 g for wraps, 70-80 g for quesadillas, 45-50 g for soft tacos, or 30 g for street tacos. Roll into smooth balls and keep covered while you work.
- Roll: On a lightly floured surface roll each ball from the center outward, rotating 45 degrees after each pass, until about 14 inches in diameter for burrito size. Lightly flour as needed to prevent sticking.
- Cook: Heat a comal or heavy skillet over medium-high heat. Cook each tortilla until bubbles form and light brown spots appear, then flip and cook the second side just until it puffs. Do not overcook — the tortilla should remain soft and flexible.
- Stack and cover: Stack cooked tortillas immediately and cover with a clean kitchen towel to trap steam and keep them tender.
Spinach Tortilla Variation
For vibrant green spinach tortillas blend 3 cups fresh spinach with 240 g water, then strain and measure out 240 g of the green liquid. Use this in place of the water in the recipe. The flavor is mild and the color is beautiful without affecting the dough’s structure at all.
Storage & Reheating
Storage
- Same day — keep tortillas stacked and wrapped in a towel or foil
- Fridge — store in an airtight bag for up to 4 days
- Freezer — freeze with parchment paper between each tortilla for up to 2 months
Reheating
- Skillet (best method) — reheat briefly on a hot dry skillet for 30-60 seconds per side
- Microwave — wrap in a damp paper towel and heat for 20-30 seconds — never microwave uncovered as it causes tortillas to stiffen
- From frozen — reheat directly from frozen on a hot pan, no need to thaw
