Cheesy Garlic Potato Bread: A Naan-Paratha Hybrid?

This recipe came from wondering what would happen if I stuffed my cheesy garlic naan dough with the kind of spiced potato filling you’d find in an aloo paratha. The answer is a soft, slightly chewy flatbread with a creamy garlicky potato and mozzarella center that gets pan-fried until golden and brushed with garlic butter right off the heat. It’s the kind of recipe that makes your kitchen smell incredible and disappears the second it hits the table. The dough is adapted directly from my Butter Chicken and Cheesy Garlic Naan. I adjusted the ratios slightly to give it more structure for stuffing and pan frying.

Cheesy Garlic Potato Bread Ingredients

Dough

  • 425 g bread flour
  • 1 cup milk, warmed
  • 1 tbsp sugar
  • 2 tsp instant yeast
  • 1 tsp salt
  • 60 g plain yogurt
  • 2 tbsp oil

Potato Filling

  • 4 medium gold potatoes, peeled and roughly chopped
  • 2 tbsp mayo
  • 1 tbsp butter
  • ½ tsp salt, adjust to taste
  • ½ tsp garlic powder

Cheese

  • 8 oz block mozzarella, freshly shredded

Garlic Butter

  • ¼ cup unsalted butter, melted
  • ½ tsp garlic powder
  • 2 tbsp fresh parsley or cilantro, finely chopped

The Dough

This dough is adapted from my Cheesy Garlic Naan recipe! I adjusted it slightly here to give it a little more body and structure so it can hold the filling without tearing when you roll it out. Bread flour gives you a chewier, more elastic dough than all-purpose which is exactly what you want for pan-fried flatbread. The yogurt keeps it tender and the warm milk helps activate the yeast quickly. Make sure your milk is warm or around room temp just not hot. Since I use instant dry yeast there’s no need to activate it but too hot and it will kill the yeast, too cold and your dough will take longer to rise.

The Potato Filling

Gold potatoes are the move here, they’re naturally buttery and creamy when mashed which means you don’t need a lot of added fat to get a smooth, rich filling. The mayo might seem like an unusual addition but it adds a subtle tang and creaminess that makes this filling taste like so much more than just mashed potatoes. Make sure to drain the potatoes really well after boiling, any excess water will make the filling too wet and cause the dough to tear when you roll it out. Mash until completely smooth with no lumps for the easiest filling process.

The Cheese

Shredding your own mozzarella from a block makes a huge difference here — pre-shredded mozzarella is coated in anti-caking agents that prevent it from melting as smoothly. A block of fresh mozzarella shredded at home melts into those beautiful stretchy pools inside the bread that make every bite so satisfying. The cheese goes in on both sides of the potato filling — bottom layer, potato, top layer — so you get cheese in every single bite.

How To Make Cheesy Garlic Potato Bread

  1. Make the dough: In a large bowl combine bread flour, warm milk, sugar, instant yeast, salt, yogurt, and oil. Mix until a shaggy dough forms then turn out onto a lightly floured surface and knead for 8-10 minutes until the dough is smooth, soft, and slightly tacky but not sticky. If using a stand mixer knead on medium speed for 5-6 minutes. Place in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled in size, about 1 hour.
  2. Cook the potatoes: While the dough rises, peel and roughly chop the gold potatoes into even chunks. Place in a pot and cover with cold water. Bring to a boil over high heat and cook until completely fork tender, about 15-20 minutes. Drain thoroughly and let steam dry for a few minutes to remove excess moisture.
  3. Make the potato filling: Transfer drained potatoes to a large bowl and mash until completely smooth with no lumps. Add mayo, butter, salt, and garlic powder and mix until fully combined and creamy. Taste and adjust salt as needed. Set aside to cool slightly.
  4. Portion the dough: Once the dough has doubled, punch it down to release the gas. Turn it out onto a lightly floured surface and divide into 6 equal pieces — use a kitchen scale for accuracy if you have one. Roll each piece into a smooth tight ball, place on a floured surface, cover with a towel, and let rest for 15 minutes. This rest is important — it relaxes the gluten so the dough rolls out easily without springing back.
  5. Fill the dough: Working one ball at a time, use a rolling pin to roll each ball into a flat circle about 6-7 inches in diameter. Place a layer of shredded mozzarella in the center leaving a 1-2 inch border around the edge. Add a generous spoonful of potato filling on top of the cheese, then add another layer of shredded mozzarella on top of the potato.
  6. Seal the bread: Carefully bring the edges of the dough up and over the filling toward the center, pleating and pinching as you go to seal completely with no gaps or seams. Press firmly to make sure it’s completely sealed — any gaps will cause filling to leak out during cooking. Flip the sealed ball over so the seam side is down.
  7. Roll it out: Using your rolling pin, gently and carefully flatten the stuffed dough ball into a circle about ½ inch thick. Be gentle and use even pressure — if you push too hard the filling will break through. Work slowly from the center outward.
  8. Pan fry: Heat a non-stick pan over medium heat and spray or brush lightly with oil. Place the stuffed flatbread in the pan and cook for 3-4 minutes until the bottom is deeply golden brown with nice color. Flip carefully and cook the other side for another 3-4 minutes until equally golden. The bread should feel firm when pressed gently and the cheese inside should be fully melted.
  9. Brush with garlic butter: While the bread is still hot, generously brush with melted garlic butter. Make sure to get it all the way to the edges. The butter will sizzle on contact with the hot bread and soak in beautifully.
  10. Serve: Serve immediately while the cheese is still melty and the bread is hot. Repeat with remaining dough balls.

Storage & Reheating

Storage Store leftover flatbreads in an airtight container in the fridge for up to 2 days.

Reheating

  • Pan (best method): Reheat in a dry non-stick pan over medium-low heat for 2-3 minutes per side until warmed through and the outside crisps back up
  • Air fryer: Reheat at 350°F for 4-5 minutes for a crispy exterior
  • Microwave: Heat for 30-45 seconds — works but the exterior will soften

Make Ahead Tips

  • Dough — make the dough and let it do its first rise in the fridge overnight — slow cold fermentation actually improves the flavor
  • Potato filling — make up to 2 days ahead and refrigerate
  • Assembled uncooked flatbreads — stuff and seal up to a few hours ahead, refrigerate covered, and pan fry just before serving
