These crispy chewy potatoes are inspired by Korea’s viral 길감자 (Gil Potato), a street-style potato snack that’s crunchy on the outside and irresistibly chewy on the inside. Made from blended potatoes thickened with starch and fried until golden, these mochi-like potato bites are perfectly crisp yet bouncy. Serve them with buldak mayo or your favorite dipping sauces like basil mayo, soy garlic, ketchup, or Korean yangnyeom sauce for an addictive snack or side dish.

Instructions
Prepare the potatoes
Peel and roughly chop the potatoes.
Blend
Add the potatoes and water to a blender. Blend until completely smooth.
Cook the mixture
Pour into a microwave-safe bowl. Microwave for 5 minutes total, stirring every 30 seconds. The mixture will gradually thicken into a paste, this is exactly what you want.
Season and add starch
Mix in the salt, then add the tapioca starch and stir until fully combined.
Transfer to piping bag
Spoon the mixture into a piping bag (or zip-top bag with the corner cut).
Heat the oil
Preheat oil to 350°F (175°C).
Pipe and fry
Pipe short strands of the mixture directly into the oil, using scissors to snip them off. Fry until golden brown and crispy.
Drain
Remove and drain on a paper towel-lined tray.
Make buldak mayo
Mix buldak sauce and mayo to taste.
More mayo = milder
More buldak = spicier
Serve
Drizzle the sauce over the potatoes or serve it on the side for dipping. Enjoy hot and crispy.
