The Best Pita Bread to Use

I tested a few different pita recipes for this dish, and the one that gave me the best results was this one from Alexandra Cooks. It’s a no-knead recipe (huge bonus!) and the fastest one to make of all the ones I tried. It creates a beautiful pocket in the middle, which is perfect for stuffing. The texture is a bit fluffier and thicker than other versions, which I actually loved—it helps hold the meat mixture in without tearing or getting soggy.

Of course, store-bought pita will work in a pinch, but if you want that perfect puff and texture, I highly recommend giving this homemade version a try.

What Kind of Meat to Use

Arayes are traditionally made with a blend of ground beef and lamb, sometimes with onion and spices mixed in. I used 90/10 ground beef only because I didn’t want the arayes to turn out too greasy. Using leaner meat helps the pita get nicely crispy and keeps the filling flavorful without being heavy.

If you prefer a richer taste, feel free to experiment with a mix of beef and lamb, but I’d still recommend avoiding super fatty blends (like 70/30) to keep your pita from getting soggy.

Don’t Overstuff the Pita

One key tip: don’t overstuff your pita halves. It’s tempting to pack in a ton of filling, but if it’s too thick, the beef won’t cook through fully on the pan. You want a relatively thin layer of meat that cooks all the way and crisps up the pita edges.

If you’re after a thicker, meatier version, you can always pan-sear them first and then finish them in the oven at 375°F (190°C) for 8–10 minutes until fully cooked through.

What to Serve with Beef Arayes

These pair beautifully with fresh, cooling sides. I love making a simple cucumber, tomato, and feta salad dressed with olive oil, lemon juice, and a pinch of salt. The brightness cuts through the richness of the arayes and keeps things balanced.

Traditionally, you might also serve them with pickled turnips, tahini sauce, or toum (garlic sauce). But honestly, they’re versatile—pair them with whatever you like!

Ingredients

Arayes

  • 6 pita breads halved to make 12 pockets
  • 2 lb ground beef I used 90/10
  • 1 onion grated and strained of excess juice
  • 5 cloves garlic grated
  • 2 tbsp parsley finely chopped
  • 1 tbsp ground coriander
  • 1 tbsp cumin
  • 2 tsp smoked paprika
  • 1 tsp all spice
  • 1 tsp sumac
  • 2 tsp salt

Yogurt Sauce

  • 1 cup yogurt
  • 2 cloves garlic grated
  • 1 tbsp parlsey finely chopped
  • 1 tbsp lemon juice

Instructions

Make the Beef Filling

  • In a large bowl, combine:
    • Grated and strained onion
    • Grated garlic
    • Chopped parsley
    • Ground coriander, cumin, smoked paprika, allspice, salt, and sumac
    • Ground beef
Mix everything together with your hands until the mixture is evenly combined.

Stuff the Pitas

  • Cut each pita in half to create 12 halves. Gently open the pocket and stuff with a thin layer of the meat mixture. Avoid overfilling—just enough to create an even layer about ½ inch thick or less.

Cook the Arayes

  • Heat a grill pan or nonstick skillet over medium heat. Lightly oil the pan if needed. Place the arayes flat-side down and cook for 3–4 minutes per side, until golden and crispy. Make sure to sear the edge (the stuffed side) by standing it up with tongs for a few seconds to get that crisp finish.

Make the Yogurt Sauce

  • In a small bowl, combine:
    • 1 cup plain yogurt
    • 1 tbsp lemon juice
    • 2 grated garlic cloves
    • 1 tbsp chopped parsley
Stir until smooth. Chill until ready to serve.
