Crab Rangoon Salt Bread

These Crab Rangoon Salt Bread rolls are everything — the soft, chewy, buttery goodness of my signature salt bread wrapped around a warm, creamy crab rangoon filling with a crispy panko exterior that mimics the crunch of a fried wonton wrapper. Finished with sweet chili sauce and green onions, this fusion recipe is the perfect appetizer, party snack, or cozy night in treat that nobody will see coming.

Why You’ll Love It

  • A perfect mashup of salt bread and crab rangoon.
  • Crispy without frying — I originally brainstormed ways to work wonton wrappers into the bread dough or wrap them around the roll, but it never felt right texturally. Using panko ended up being the best way to get that golden, crunchy exterior without compromising the bread.
  • Ultra-creamy filling that warms up inside the roll and stays luscious.
  • Make-ahead friendly — the filling mixes quickly, and the rolls bake beautifully every time.
  • Crowd-pleasing flavors with a sweet-savory finish from the chili sauce.

Crab Rangoon Salt Bread: Two Favorites in One

This recipe started with a simple question — what if crab rangoon and salt bread had a baby? The answer is this: a buttery Japanese-style roll with a panko crust, stuffed with a warm creamy crab and cream cheese filling, and finished with a brush of sweet chili sauce. The panko was the key discovery — I originally tried incorporating wonton wrappers into the dough but it never felt right texturally. Panko ended up being the perfect solution, giving you that signature crunch without compromising the bread at all. If you haven’t made my original Salt Bread (Shiopan) yet, start there first — it’s the base of this recipe and one of my most popular recipes ever.

Crab Rangoon Salt Bread Ingredients

Salt Bread Dough

Crab Rangoon Filling

  • 16 oz cream cheese, softened to room temperature
  • 16 oz imitation crab, finely chopped
  • 4 green onions, finely chopped
  • 1 tbsp Worcestershire sauce
  • 2 tsp garlic powder
  • 2 tsp granulated sugar

Panko Crust

  • Panko breadcrumbs, for topping
  • Water, for spraying

Garnish

  • Sweet chili sauce
  • Green onion, sliced

The Salt Bread Dough

This recipe uses my original Salt Bread (Shiopan) dough as the base — I’m not rewriting the entire dough process here because that post has all the detailed instructions you need for kneading, shaping, proofing, and achieving perfect windowpane strength. Follow that recipe all the way through shaping (Step 15), then come back here for the filling and finishing steps. The dough is what makes this recipe special — don’t rush the proof and don’t skip the windowpane test.

The Crab Rangoon Filling

The filling is simple but rich — softened cream cheese mixed with finely chopped imitation crab, green onion, Worcestershire sauce, garlic powder, and a little sugar for that classic slightly sweet crab rangoon flavor. Make sure your cream cheese is fully softened to room temperature so it mixes smoothly with no lumps. Transfer to a piping bag for the easiest and cleanest filling process — you’ll thank yourself later.

The Panko Crust

The panko crust is the genius move that makes this recipe work. Spraying the tops of the proofed rolls with water helps the panko stick, and the combination of high initial heat followed by a lower baking temperature gives you a deeply golden, crunchy exterior that perfectly mimics the crispiness of a fried wonton wrapper without any frying at all.

How To Make Crab Rangoon Salt Bread

  1. Make the salt bread dough: Follow the dough instructions from my Salt Bread (Shiopan) recipe all the way through shaping the rolls — up to Step 15. Begin making the filling while the shaped rolls complete their final proof.
  2. Make the crab rangoon filling: In a large bowl combine softened cream cheese, finely chopped imitation crab, finely chopped green onion, Worcestershire sauce, garlic powder, and sugar. Stir until smooth and well combined. Transfer to a piping bag and set aside.
  3. Add the panko crust: Preheat oven to 450°F. Once the rolls finish their final proof, spray the tops generously with water. Sprinkle panko breadcrumbs generously over each roll so they’re well coated.
  4. Bake the rolls: Place rolls into the oven and immediately lower the temperature to 400°F. Bake for 12-15 minutes, rotating the tray halfway through for even browning, until deeply golden and crispy on top.
  5. Fill the rolls: Remove rolls from the oven and lower the temperature to 350°F. Cut a shallow slit down the center of each roll. Pipe the crab rangoon filling generously into the center of each roll. Return to the oven and bake for about 10 minutes to warm the filling through.
  6. Garnish and serve: Brush sweet chili sauce right over the exposed filling. Sprinkle with sliced green onion. Serve warm immediately!

Storage & Reheating

Storage Store leftover rolls in an airtight container in the fridge for up to 2 days.

Reheating

  • Oven (best method): Reheat at 350°F for 8-10 minutes until the filling is warmed through and the crust crisps back up
  • Air fryer: Reheat at 325°F for 5-6 minutes for the crispiest result
  • Microwave: Works in a pinch but the panko crust will soften — heat for 30-45 seconds

Make Ahead Tips

  • Filling — make up to 2 days ahead and refrigerate in the piping bag until ready to use
  • Rolls — bake the plain panko-crusted rolls ahead, then fill and do the second bake just before serving for the freshest result
